Granini's BETTER Sugar Cookie recipe
So I was hunting through my cookbooks this week, looking for yummo recipes to make for my upcoming party, and found this treasure stashed in the back. I received the recipe as part of a recipe exchange from noelle o designs. Original recipe found here When I tried it again, it was so OH MY DELICIOUS, that I now refuse to make my original sugar cookie recipe, and will only use this one.
When I'm making heaps and gobs and loads of cookies for cookie platters and such, I use the 2 teaspoon cookie scoop, and then cut those cookie blobs in half, and roll them out. That will give you wee bite sized cookies that are SO stinkin' delicious, you won't be able to resist coming back for more!
So here you go!
Ingredients:
1 cup sugar
1 cup powdered sugar
2 cups butter, unsalted and soft
1 teaspoon vanilla
4 1/3 cups cake flour
3/4 teaspoons baking soda
3/4 teaspoons baking powder
1/4 teaspoon salt
plain sugar (or colored sugar) for rolling in.
Directions:
- Heat oven to 375ยบ. In a medium bowl, cream sugar and butter. Slowly add in egg and vanilla.
- Combine cake flour, baking soda, baking powder and salt. Slowly add in the dry ingredients to the wet ingredients, but do not over mix.
- Use a 2 teaspoon cookie scoop to scoop out your cookies onto parchment paper. Roll each ball in sugar. Flatten slightly.
- Bake 9 to 10 minutes, or until pale golden -- do not allow them to brown.
