Snickerdoodles


GranNini's Snickerdoodles
(aka What To Do with Leftover Pie Crust)

Ingredients:

Unbaked Pie Dough
1 to 3 Tablespoons of Margarine or Butter, softened
1 to 2 teaspoons of Cinnamon
1/4 Cup Sugar
1/2 teaspoon Nutmeg
Cooking spray

Directions:

  1. Preheat oven to 400 degrees.
  2. Sprinkle flour on a clean working surface.  
  3. Sprinkle flour upon your rolling pin.
  4. Roll out your pie dough until it's just about as thin as it will go.
  5. Spread softened margarine or butter across the entire surface of the pie crust.  (Obviously if you have less pie crust, you won't need as much margarine or butter.)
  6. Sprinkle cinnamon across the surface of the pie crust.
  7. Sprinkle sugar across the surface of the pie crust.
  8. Sprinkle nutmeg across the surface of the pie crust.
  9. Starting at one of the long edges of the pie crust, gently roll up the pie crust into one long roll.
  10. Using a sharp knife, slice the "log" into 1 inch segments.  No need to be exact, just eyeball it.
  11. Lightly spray your pie plate with cooking spray.
  12. Gently transfer the cookies onto the pie plate.
  13. Bake at 400 degrees for approximately 15 minutes.  The pie crust should be firm to the touch.  Not too soft, not too crisp.
  14. Using a spatula, gently flip the snickerdoodles over onto their backs, allowing the melted cinnamon goo to be on the top of the cookies.  This step also prevents the cookies from sticking to the pie plate.
  15. Wait until the snickerdoodles have cooled for a few minutes before eating, or you may burn your tongue.  I prefer to eat these cookies when they're cool -- or for breakfast in the morning.  However, I don't often get the opportunity to eat them when they're cool, as the kiddos in my house will gobble them all as soon as they've cooled off.

 Roll out your dough, then spread with margarine or butter

 Sprinkle with sugar 

 Sprinkle with cinnamon (or vice versa)

 Roll into a log

 Cut your log into 1 inch segments

 Place your unbaked snickerdoodles onto a lightly sprayed pie plate.  
Bake at 400 degrees for about 15 minutes.

 Yummy yummy!!
